Acacia senegal, also known as gum arabic, is derived from the exudate of the trunk of acacia in the leguminous family, so it is also called acacia gum. The main components of Acacia senegal are high molecular polysaccharides and their calcium, magnesium and potassium salts. It mainly includes gum aldose, galactose, glucuronic acid, etc. Acacia senegal with good quality is amber in color, and its particles are large and round. It is mainly produced in Africa.
It is a safe and harmless thickener that naturally solidifies in the air. Light white to light yellow brown semi transparent block, or white to orange brown granular or powder, is a polymer electrolyte with a molecular weight of 220000 to 300000. Odorless, odorless, flammable. It can gradually dissolve into an acidic viscous liquid in water, but after some time, its viscosity decreases, with a solubility of about 50% (W/V) and is insoluble in ethanol. It forms a stable coherent sheaf with gelatin or albumin. Using acidic alcohol to precipitate it yields free arabic acid.
