Sorbitol, also known as sorbitol, has the chemical formula C6H14O6, and has two optical isomers, D and L. It is the main photosynthetic product of Rosaceae plants. It is mainly used as a sweetener and has a cool sweet taste. Its sweetness is about half that of sucrose, and its calorific value is similar to that of sucrose.
1. It can be used as a raw material for the production of vitamin C, and sorbitol can be produced through fermentation and chemical synthesis.
2. It can be used as a nutritional sweetener, wetting agent, chelating agent, and stabilizer.
3. It can be used in the synthesis of resins and plastics, the separation and analysis of low boiling point oxygenated compounds, and also as a gas chromatography stationary liquid, thickener, hardener, insecticide, etc.
4. It can be used as a moisture regulating agent for toothpaste, cosmetics, and tobacco.
5. It can be used as a diuretic and dehydrating agent to treat brain edema and elevated intracranial pressure, treat elevated intraocular pressure in glaucoma, and also for edema and oliguria with normal cardiac and renal functions.
6. It can be used as a water retaining agent for aquatic products. The ratio of sucrose 2.1%, sorbitol 3.15%, and composite phosphate 1.00% can effectively reduce the water activity of dried fish slices and improve the Ca-ATPase activity.
