Sucrose stearate is white to yellow powder, or colorless to light yellow viscous liquid or soft solid, odorless or slightly special smell. Soluble in ethanol, acetone. Monoesters are soluble in hot water, but diesters or triesters are poorly soluble in water. The higher the monoester content, the stronger the hydrophilicity; the higher the diester and triester content, the stronger the lipophilicity. It generally has no obvious melting point, is stable below 120°C, and decomposes when heated to 145°C.
