What is Polylysine? Polylysine  is a straight-chain polymer of lysine as a light yellow powder, highly hygroscopic and slightly bitter. It is not affected by pH value, stable to heat (120ºC, 20min) and can inhibit heat-resistant bacteria, so it can be heat treated after adding. However, it may reduce the activity due to binding when it meets acidic polysaccharides, hydrochloride, phosphate, copper ions, etc. Polylysine is a natural biological metabolism product.
