What is Polylysine? Polylysine is a straight-chain polymer of lysine as a light yellow powder, highly hygroscopic and slightly bitter. It is not affected by pH value, stable to heat (120ºC, 20min) and can inhibit heat-resistant bacteria, so it can be heat treated after adding.
