Potassium sorbate is the potassium salt of sorbic acid. It is white to light yellow scaly crystals, crystal particles or crystal powder. It is odorless or slightly smelly. It is easy to absorb moisture and be oxidized and decomposed when exposed to the air for a long time. Easily soluble in water.
