Maltitol , also known as hydrogenated maltose, is chemically named 1,4-o- α- D-glucopyranosyl-D-sorbitol, which is composed of 1 molecule of glucose α- A disaccharide formed by connecting a 1,4-bond to a sorbitol. The molecular formula is C12H24O11, and the relative molecular weight is 344.31. Maltose alcohol is colorless and transparent crystal, which is easily soluble in water, but difficult to dissolve in methanol and ethanol.
