Mannitol is a six-carbon sugar alcohol that can be obtained by catalytic hydrogenation of fructose and has low moisture absorption. It is often used as a powder dispersant in the manufacture of gum sugar to avoid adhesion with manufacturing equipment and packaging machinery, and as a component of a plasticizer system to maintain its soft properties. It can also be used as a diluent or filler for sugar tablets and as a chocolate flavored coating for ice cream and candy. It has a pleasant flavor, does not fade at high temperatures, and is chemically inactive. Its pleasant flavor and mouthfeel mask the aromas of vitamins, minerals, and herbs.
