Calcium glycerophosphate is a white or yellowish crystalline powder, odorless, almost odorless, and slightly bitter.  It is slightly hygroscopic in the air.  When the crystal water is lost at 130ºC, anhydrous matter is formed and decomposes above 170ºC.  Each g is soluble in about 50ml25ºC water.  It is more soluble in water when the temperature is lower, and the aqueous solution is alkaline.  Insoluble in ethanol, soluble in glycerol.  Citric acid or lactic acid can improve its solubility in water, but it breaks down easily when heated.  Commonly used for food calcium fortifier, used for bread, flour, noodles, soy milk, etc.  Use less than 1%.
